Egg in a Hole Recipe – Runny Yolk over Toast with Asparagus and Tomatoes
Egg in a Hole is a healthy and tasty toast with a runny yolk in the middle. Pair it with some greens and you are in for a nice brekkie!
Ingredients
2 slices of Bread
2 Egg
Baby Asparagus
Cherry Tomatoes, halves
Olive Oil / Butter
Seasoning of your choice (e.g. Sesame Seeds and Black Pepper)
1. Heat a pan with olive oil. Add a handful of baby asparagus and cherry tomatoes. Once cooked, remove and arrange them on a plate.
2. Carve out a hole in the bread. On a pan with butter, lightly pan-fried on one side and flip it over.
3. Crack an egg into the hole.
4. Sprinkle sesame seeds and black pepper.
5. Cover with a lid. Remove once the egg whites are cooked.
6. Arrange the two toasts onto the plate.
Slice the toast and let the yolk flow!
