Kajiken: One-of-a-kind Mazesoba Shop In Singapore Featuring Dry Ramen
Coined as Singapore’s first Mazesoba shop, Kajiken is a humble dry ramen eatery situated in Tanjong Pagar. As its name suggests, Kajiken serves ramen noodles without soup.
The name ‘Maze’ refers to ‘Mix’ while ‘Soba’ refers to ‘Noodles’. Hence, the idea is that you will have to mix the noodles before you eat it.
Tanjong Pagar has a lot of ramen competition. But what makes Kajiken stands out is that their ramen does not come with soup. This makes the noodles and sauce even more important as these are the two ingredients that will allow the dish to outshine the rest.
As I have always liked my bowl of noodles to be soupy, I was initially worried about it being too dry to my liking. But, never try never know!
I had the Mazesoba Nagoya Style ($12.80) that came with a whole lot of spring onions, spicy minced pork, shredded seaweed, diced vegetables and a soft boiled egg tucked neatly in the middle.
Mix it all together with the special sauce and oil at the bottom. And you will see that the amount of ingredients are just enough to ‘cover’ every strand of the thick firm noodles.
If you like it spicier and tastier, help yourself to the vinegar and chilli oil available on the table too.
Taste-wise?
One bite in and I was swept.
The noodles was springy and not as dry due to the sauce and soft boiled egg that made it smooth and at the same time, very tasty. Each mouthful was filled with fragrance of the seaweed and crunchiness of the vegetables. Not forgetting the hints of spiciness that hit you right after.
Finished the noodles but still left some sauce behind? Just say the magic word ‘Oimeshi’ and you will be served a small bowl of rice to go with it.
From the menu, the signature Mazesoba With All Toppings ($15.80) and Mazesoba With Cod Roe With Mayonnaise ($13.80) looked promising as well.
Seems like a return visit is warranted.
