Kimchi Stew with Spam, Clams and Tofu Recipe – Korean Comfort Food

Annyeonghaseyo! I am back with another kimchi-based recipe.

This Kimchi Stew with Spam, Clams and Tofu combines all my favourites into one pot. The stew is incredibly flavourful and hearty while brimming with ingredients. Also, this might be my proudest dish so far!

Kimchi Stew (Kimchi Jjigae) is a popular Korean comfort food. A good-tasting kimchi stew is hard to find in Singapore. I like SBCD Korean Tofu House‘s version but the prices have hiked over the years.

Anyway, it is quite easy to recreate this at home! The portion is good for two people. Or you can save the remaining for the next day too.

1. Heat a pot with sesame oil and add garlic, scallions, onions, spam, kimchi, gochujang and gochugaru.

Optional: Either omit or replace spam with tuna. Adjust the amount of chilli based on your spice tolerance.

2. Stir well till the mixture starts to simmer.

3. Add sesame seeds, soy sauce and cooking wine.

4. Pour in about 300ml of water (or more to dilute it further).

5. Spread out the rest of the ingredients like enoki mushroom, spam, clams and tofu in a circle. Let it sit for a while.

6. Crack two eggs in the middle and garnish with scallions, green chilli and small red chilli.

And it’s ready to be served!
