Le Fusion Restaurant (Robertson Quay) – Embark on a gastronomic journey with the finest Chinese and French dishes
Care to travel the world from the comfort of your dinner table? Le Fusion is here to take you on a gastronomic journey through the finest Chinese and French dishes that have graced diners’ tables worldwide.
Contrary to what the signage may have you believe, Le Fusion’s name is not derived from a lofty endeavour to reach the heights of French haute cuisine. Rather, “Le” is derived from the Mandarin word for “joy”.
Aside from this fusion of languages, the owners’ love for the East Meets West experience is palpable in the restaurant’s decor. From the floor to ceiling graffiti-esque artwork of a Chinese maiden, to the modern touches at the bar, Le Fusion is all about letting diners enjoy the best of both worlds.
Open from evening till late, Le Fusion welcomes guests with a pretty Focaccia Rose Mantou, an amuse-bouche with an Asian twist that yields hints of pumpkin and oregano.
Move on to Le Fusion’s tapas menu, where you can enjoy the sinfully delicious Crispy Pork Belly Mantou ($12). Its satisfying crispiness is inspired by The Philippines’ rendition of suckling pig, lechon. Sandwiched between soft fluffy mantou and layered with marinated salted vegetables, mayonnaise, and crushed peanuts, it is a treat that sends you straight to cheat day heaven. What are diets, anyway?
For healthier starters, indulge in some Imperial Double Boiled Soup ($28). This luxe take on the traditional Buddha Jumps Over the Wall serves up a nutritious medley of abalone, scallop, dried oyster, and Chinese herbs including wolfberries. Enjoy this comforting broth on its own, or with a dash of nu er hong for an added twinge of sweetness. The difference is night and day!
Or, journey to the European lands with a pan-seared Rougie Foie Gras ($25). The result of a culinary experiment – common in Le Fusion’s kitchen – this showy appetiser arrives beneath a dome of mysterious aromatic smoke. Served atop a bed of Chinese glutinous rice and encircled by in-house tangy sauce, the foie gras is incredibly rich and fatty. A guilty indulgence indeed.
Journey further into the world of fusion dining with the main course.
Highlights include the Oriental Codfish ($38), served with vegetables and cornbread. Buttery smooth, the cod fish lacks the distinct fishy aroma. Instead, enticing scents come to the fore, inviting you to indulge in just one more bite every time you pop a mouthful of that delicious fish.
Though not a unique concept in itself, the Soft Shell Chilli Crab Pasta ($26) is perfectly executed with al-dente pasta and four umami soft shell crabs.
Recipes from the land bring treats like Tsingtao Beef Fillet ($42). Tuck into 180g of grilled Australian Augustus beef tenderloin that has been softened through a 12-hour infusion with Tsingtao beer. A dish plated elegantly that would have been more enjoyable had the beer not overwhelmed the natural flavours of the beef.
Just like the codfish, the Asian Crusted Provencal Lamb Rack ($46) arrived devoid of its distinct, gamey taste. Instead the umami notes of the bread crumbs and provencal herbs lent this dish its rich flavour, along with the mandarin orange skins and Szechuan peppers. Personally, I would prefer the taste to be less “rich” or intense, though this was another well-executed main dish.
Le Fusion’s experimenting continues with their dessert menu. The Le Fusion Chendol ($14) is a must-try with its three-layer blend of chendol, kidney beans with jelly and crushed ice, and Baileys cream which takes the whole thing up a notch. Pulut Hitam gets a modern twist in the Panna Cotta with Sweet Glutinous ($14), a traditionally Italian sweet.
