Pesto Poached Eggs on Spinach Avocado Toast Recipe

Ingredients
2 Eggs
1 whole Avocado
1 bowl of Spinach
2 Toast
Pesto Sauce
Seasoning (Mixed Herbs, Black Pepper)
Prepare two poached eggs with your preferred method, like using an egg poacher or vinegar-infused boiled water.
Blanch some spinach in boiling water for about a minute, then remove, pat dry and leave aside.
1. Toast two slices of bread. Mash avocado onto the toast.
2. Place both toast side by side and add the cooked spinach in the middle.
3. Arrange some sliced avocado around it.
4. Carefully place two poached eggs on top.
5. Spread a layer of pesto sauce.
6. Seasoned with mixed herbs and black pepper. Optional: Add some extra raw spinach.
Slice the yolk apart and savour the rest with the smooth silky yolk!
