Spice Brasserie Christmas Buffet with Baked Oyster, Peranakan Turkey & Turkey Biryani

Celebrate Christmas with Parkroyal on Kitchener Road! When you first enter the hotel, this gigantic Christmas tree filled with poinsettias and golden decorations will greet you! Guests or visitors of the hotel can enjoy carolling sessions at night too!

They’ve got festive buffet spreads specially curated by the team of chefs from Spice Brasserie and Si Chuan Dou Hua Restaurant.

For the festive food line up, you can expect the good ‘ol Pan Seared Honey Baked Ham and Steamed Seabass Fillet with Nyonya Assam Curry Gravy and Brandy Crab Bisque. The Pan Seared Honey Baked Ham is a winner with its crispy skin resembling a crackling pork belly, but it’s just a crispy skinned ham! Now that’s a first.

The Peranakan Style Roasted Spice-Cured Turkey will be at the carving station – created by Malacca-born Baba Chef Jimmy Bong! The Roasted Brined Turkey with Chestnut Stuffing is a special one too, with the taste of Christmas and roast!

The queue for the Crab Bee Hoon was hot! The slurpy noodles with huge pieces of crab – pincers, and legs – made almost everyone go back for seconds! The bee hoon was drenched with delicious savoury sauce, and chunks of crab fell out easily from the shells!

The Turkey Biryani Rice with Sweet Raisin and Cashew is flavourful albeit slightly dry. Definitely wins brownie points for being a local dish with a Western twist!

The baked oysters are also a must-try! The Baked Oyster Kilpatrick and Baked Oyster Mentaiko Sauce are succulent favourites. They aren’t wholly cooked through; more like half-baked – but this technique certainly means retaining the oyster juices and slurpiness!

The Roast Beef, when sliced thinly, has a sweet, juicy flavour. It’s juicy and the texture is not too chewy or rubbery.

Finally, it was dessert time. Nothing quite prepared us for this sight… Woo-hoo!

A train set running around an entire edible dessert village! There were jellybeans, cookies, snowman cupcakes, gingerbread men, and many more! This spectacular display was prepared by Executive Chef Robert Chan.

Unfortunately, this was only for one night during the Opening Night. Guests and customers can also enjoy a festive dessert spread of Sea Salt Caramel Log Cakes, cupcakes, as well as other sweets and jellies!

And this concludes the festive highlights for the collaboration with Spice Brasserie and Si Chuan Dou Hua Restaurant! What a Christmassy feast for hotel guests and visitors alike! Don’t forget to reserve your seats to avoid disappointment.
