Yaki Udon Stir-Fried Noodles with Squid and Sunny Side Up

I love stir-frying my noodles and any other ingredients I can find in the fridge or at the supermarket. The other day when I was at Giant, I came across a packet of cooked squids selling at $1 plus! Without further ado, I bought it home intending to cook a dinner for my dad that night.

Some time back I had cooked clams (my favourite) with Udon and still got two more packets of Udon left. Yes and i am going to use one of the remaining packet. By the way, they are on offer at 3 for $2.

So, the recipe for my Squid Yaki Udon is really easy to prepare and follow. Ingredients are readily available in major supermarkets. Of course you can get fresher squids or any other proteins you like from the wet market too!

Budget: $1 squids from Giant Supermarket, 60 cents Udon noodles, free egg from the fridge

Manpower: Your hands and 10 minutes of stir-frying.

What you need!

  • Squids (as much as you want!)
  • 1 packet of Udon
  • Garlic
  • Oil
  • Dark Soy Sauce
  • Chilli Powder
  • Egg

Here you go!

  1. Heat up the pan with a spoonful of cooking/olive oil
  2. Add chopped garlic and fried till golden brown ((I like adding garlic to my dishes. Somehow it makes the dish more fragrant and tastier.)
  3. Add squids
  4. Add a cup of water and a table spoon of dark soy sauce
  5. Stir till water starts to bubble
  6. Add udon
  7. Add a teaspoon of chilli powder (depending on your tolerance for spiciness)
  8. Left to simmer for 3-4 minutes and empty content into a bowl
  9. Crack an egg over the hot pan to cook a sunny side up
  10. Transfer sunny side up to the bowl of squids and udon

Ta-dah! Smells good…
