Yang Ming Seafood (Bishan) – Live Seafood and Zi Char in a coffee shop

Yang Ming Seafood 扬名海鲜餐馆 has opened a second outlet at Bishan, with the first being at Bukit Batok.

Situated in a local coffee shop, Yang Ming Seafood stands out from other zi char stalls with tanks of live lobsters and crabs lining its storefront. Besides the typical range of zi char dishes, diners can get live seafood which includes lobsters, fish and crabs cooked in various styles.

Menu

One of the highlights and highly recommended dish is the Soy Bean & Egg Steam Fish 滑蛋豆漿蒸魚 (with Red Grouper 红班鱼, $7 per 100 grams). This signature dish by Yang Ming Seafood is best savoured with their fresh red grouper, sliced and deboned, before steaming in a housemade mixture of soybean sauce, egg, and Chinese cooking wine. What makes this dish so delicious besides the tender fish meat, is the well-executed pool of smooth silky egg.

The Sri Lankan crabs are sold at seasonal prices with choices like Hua Diao Steamed, Pumpkin Cream, Salt Baked, Black Pepper and more. We had the Live Sri Lanka Crab 螃蟹 (around 1kg, $60) nicely coated in an intensely rich salted egg yolk sauce.

In for something more luxurious? The Live Boston Lobster 辣椒龙虾 (500g, 1 for $38, 2 for $70) cooked in chilli crab, is worth a try. I like that the meats are succulent without the chewy texture (which is a big no-no for lobsters).

Another interesting dish is the Indonesian-style Prawns with Crispy Bread 面包虾 $35, also new to the menu.

The large prawns are presented over a huge toasted bread shaped like a bundt. Definitely a good idea of having the bread to mop up the rest of the savoury sauce. Nonetheless, I thought the prawns were a tad tough (probably explainable by the fact that they weren’t live prawns used).

The Yang Ming Signature Fried Fish Head 扬名招牌炒鱼头 $20 (based on seasonal price) is particularly enjoyable too. The chunks of fish head are fried in a flavoursome sticky black sauce that calls for some rice to go with.

Some other zi char dishes, also good for sharing, comprises of the Dong Po-style Braised Pig Trotter 东坡猪脚 $18, Sliced Pig’s Stomach with Dried Shrimp 虾米炒猪肚 $12 and Thai-style Fried Bee Hoon 泰式干炒米粉 ($5/8/10).
