Bebek Goreng Pak Ndut – Indonesian Fried Duck and Free-flow Sambal

Bebek Goreng Pak Ndut began as a modest stall in Indonesia, and has since grown into one of the best. After arriving in Singapore in 2015, it introduced Singaporeans to an authentic taste of this Indonesian-style fried duck aka Bebek Goreng.
There are three outlets in Singapore – SingPost Centre, Lucky Plaza, and Westgate. The Lucky Plaza outlet we visited has high Google ratings, and an endless stream of customers even on a weekday afternoon.

At Bebek Goreng Pak Ndut, each duck undergoes an intensive 24-hour marination of traditional Indonesian spices before being fried till golden and crispy.
Complementing the dishes here are five types of sambals in varying degrees of spiciness. With distinct taste profiles, they elevate the dishes in various ways. Sambal lovers would be thrilled to know that these are also available free-flow.
🌶 Level 1: Sweet Chilli Sauce – Sweet, and good with grilled dishes.
🌶🌶 Level 2: Green Chilli – Tangy with manageable spice level.
🌶🌶🌶 Level 3: Belacan Chilli – Bold, rich and flavourful.
🌶🌶🌶 Level 3: Sangan Chilli – With spring onion and shallots.
🌶🌶🌶🌶 Level 4: Original Chilli – This is fiery.

With no GST and service charge, and mains starting from $9.90, this is quite a steal, especially for office lunch-goers.
The mains feature duck and chicken dishes, served either fried or grilled, with rice, tofu, tempeh, side salad, and sambal. There are sides like Mixed Vegetable $7.90, Crispy Duck Skin $5.90, and Duck Satay $9.90, and soups as well.
Menu

The signature Original Crispy Fried Duck with Rice $11.90 features the chunky duck leg, with crispy thin skin and generous meat.

For those who like chicken, the Original Smashed Fried Chicken with Rice $9.90, and Grilled Chicken with Rice $9.90 are equally tasty.
The smashed chicken is also as crispy and comforting. It is a tie between this and the duck.
The grilled chicken, on the other hand, is coated in a layer of sweet soya glaze, which gives it a sticky, charred finish. It is not cloyingly sweet. and the meat is moist and tender. This won the heart of my friend.

The Chicken Soup $8.50 is hearty yet delightful. Add a bowl of Steamed Rice $1, complete with sambal, and this can easily be a meal by itself.
Other must-try soups on the menu are the Oxtail Soup $9.90, and Beef Soup $9.50.
Another noteworthy dish is the Kangkong Belachan $7.50, stir-fried till fragrant, with a nice balance of heat, crunch, and umami-ness.

The Fried Egg & Tofu $7.90, commonly known as Tahu Telur, is a popular Indonesian side. This Indonesian style of combining egg and tofu into one palatable dish is my favourite. The contrasting texture and flavour combination is truly enjoyable.

Have an Avocado Juice $4.50 the Indonesian way too.
