Truth be told, Crystal Jade Kitchen is my mum’s favourite restaurant since I was a child. Bringing her back to this place is definitely going to evoke memories amidst the familiar sights and taste of the food.
Nothing can wow more than the starter that whacked the table with a flavoursome plate of Roasted honey barbecue pork collar 烧烤猪颈肉($16.80 per serving). The meats score for their high fat marbling that rewards instantly with a melt-in-the-mouth tenderness. Well-balanced with a tinge of bitterness from the lightly charred edges and sweetness of the glistening sauce, this plate of stunning pork collar would breathe life into you.
Interesting creations that can be found when you dine in Crystal Jade Kitchen include the Shrimp Paste Chicken ‘Bao-ger’ 虾酱鸡扣包($3.80 per piece, minimum 2 pieces) and the comforting Braised fish maw soup 鱼鳔羹 ($8.80 per person) with the option of a crab meat topping 蟹肉鱼鳔羹 ($10.80), and Sautéed assorted mushroom with gluten and preserved vegetable 雪菜 豆根双菇($14.80).
Crystal Jade has one of the thickest and smoothest Cantonese congee I ever had. Despite its pale whitish appearance, taste-wise, it is as tasty as the ingredients added in. Introducing the trinity of congee, take your pick from the Prawn ball with spinach congee, Pumpkin, spinach & lean meat congee and Chinese & wolfberry with dried scallop congee (prices between $8.80 – $9.80).

One can never get tire of cordyceps-infused dishes, enriched with various health benefits perfect for our folks.
The nourishing Steamed chicken with cordyceps flower and black fungus in Chinese wine 虫草花黑木耳蒸鸡 ($18.80, half & $36.80, whole) arouses the senses with a waft of herbal and winey fragrance, followed by a gustatory bite of the tender chicken cubes, crunchy black fungus and earthy notes of springy cordyceps flowers.
More soul-hooking dishes available are the Deep-fried chicken coated with black bean and spice served on a bed of crunch fried minced garlic and black beans 香辣风沙鸡 ($16.80, half and $32.80, whole), Seafood with conpoy thick soup 瑶柱海鲜羹 ($14.80 per person) and Fish maw thick soup with baby abalone & conpoy 金鲍瑶柱鱼肚羹 ($16.80 per person).

Savour delicacies by Executive Chef Chan Wing Kwong, such as the Combination of suckling pig roll and deep-fried lobster with French mustard sauce 乳猪手卷件法国芥末籽炸龙虾 , Lobster thick soup in coconut 椰皇龙虾羹 and Simmered giant garoupa belly with peach resin in fish broth 桃膠鱼汤浸龙趸鱼腩.
Don’t miss out on gratifying highlights such as the Ramen with abalone cubes and mushrooms, and Sauteed Spanish pork with Chinese yam and mushroom too. The former boasts thick strand of noodles coated in a luscious abalone sauce with bouncy soft abalone cube, while the later proves to be a crowd-pleaser, especially with the vibrant and toothsome vegetables.
