Impromptu by Paul Lee, Taipei – One Michelin Star Restaurant in Regent Hotel

Impromptu by Paul Lee is a one Michelin-starred fine dining restaurant located in basement one of Regent Hotel in Taipei.

The visit was made in May 2023 for the Spring Tasting Menu, complemented with a Cocktail Pairing.

Service is prompt and friendly. The staffs begin explaining every dish and drink in Mandarin which is a little hard for me to comprehend, and they don’t seem to converse very well in English either. I thought it might lessen the experience for tourists who don’t speak the language. Nonetheless, the effort to switch to English is much appreciated.

There are table and counter seats where one can watch the chefs in action.

Each dish is exquisitely prepared using seasonal ingredients, boasting bold, exciting flavours that showcase the chef’s innovative creations.

The course commences with a trio of dainty amuse bouche and delicious warm blueberry lavender bread.

Several rounds of seafood-centric dishes follow thereafter, comprising of succulent scallops with apple slices, zucchini-wrapped cod fish, flame-grilled prawns and whole firefly squid in squid ink sauce.

The hearty lamb saddle, served medium rare, is fatty and tender, and the highlight is in the homemade sausage stuffed in the middle.

The carbs tasted really good. The bamboo rice is flavoursome while the sour and spicy pulled noodle has a nice chew.

Desserts are works of art. One of which is inspired by a breakfast dish, featuring almond milk poured over oat cookie crumb and sorbet.

The cocktails are pleasant and refreshing in general.
