Introducing the one-of-a-kind Truffle Cheese Fondue, a spun off the usual cascading chocolate fountain, this is bound to be the highlight of the Christmas season. The velvety smooth cheese infused with truffle (I heard that it took them many tries to perfect the recipe!) would be an amazing combination for those who love these worldly gems.
The truffle taste was playfully light yet you would know it is there, and I was glad the cheese wasn’t overwhelming nor greasy. There were condiments like chips and bread for sticking underneath the blanket of gold.
And I do agree with several others at the same table, that the sauce goes well with literally anything. Simply get a bowl of those addictive truffle cheese and dunk your slice of ham and turkey in.
You can’t skip the Carvings in a buffet, especially a Christmas season one!
Look out for the German Pork Knuckle with White Pepper or Pineapple sauce and the Baked Honey Cinnamon Gammon Ham with Citrus Sauce. You really can’t go wrong with the gammon ham and the ones here were really tender.
The Baked 7-Spices Turkey with Homemade Chilli sauce was my favourite for its flavoursome skin.
Preparation for this Asian-inspired roast turkey requires a 24-hour marination with 7 kinds of aromatic Peranakan spices.
The Live Outdoor BBQ features the Japanese Scallop with Mentaiko Sauce, Tandoori Chicken Kebab with Mushroom, Mini Crayfish with Homemade Spices and Grilled Zucchini.
The Mini Crayfish could be easily pulled out from its shell and was tastefully tender. This reminded me of the Homemade Lor Mee with Crayfish I had previously during the Surf and Turf buffet. It was as awesome too.
Japanese Scallop with Mentaiko Sauce was given a meaningful grilled with juices locked-in neatly. The texture was bouncy yet succulent and the mentaiko sauce bubbled unrestrained under the heat.
Other noteworthy meats include the Black Pepper Pork Ribs, Port Wine Glazed Rack of Lamb, Slow Braised Beef Cheek with Madeira Wine and Oven-Roasted Barramundi on Ratatouille with Champagne Sauce.
The meats were well-cooked, even the lamb meat was nothing chewy nor gamey.
For those who need to satisfy your crustacean cravings, there are Live Oyster, Sweet Poached Prawn and Short Neck Clam to feast on while you sip a piping hot bowl of Oven Roasted Butternut Pumpkin Soup with Mascarpone Cheese.
I was wildly excited for the Desserts. There are the Festive Tarte, Santa Claus Mini Cheesecake (with strawberries creatively used as hats), Christmas Mini Cupcakes (in a Ferris wheel), Valrhona Dark Chocolate Cake and the elaborate Ivory White Chocolate Log Cake.
Have a go at DIY-ing your Gingerbread (wo)man too. The kids would love this too!
