SONS Singapore – New Italian Menu by Michelin Star chef, Beppe De Vito

For corporate dwellers around Telok Ayer and Chinatown, China Square is a mecca of eateries and watering holes. Home to a tasteful Italian menu curated by Michelin Star chef, Beppe De Vito, SONS has established itself as a buzzy Italian cafeteria by day, trendy bar by night.

Featuring an in-house cocktail and wine bar, as well as a salami bar, diners are treated to an indulgent feast of sharing plates, pasta, and decadent desserts.

The Homemade Salami Platter ($22) is a signature item comprising four types of salami, made from top quality pork flavoured with herbs – Smoked Kurobuta Pork Lonza, Capocollo, Guanciale and Pancetta. Made in-house in a specially built curing room, the meats yield delightful, smoky flavours that entice you to have more.

With selections of SONS’ salami available on Redmart and to go, diners can enjoy their own Italian feast, made with artisanal Italian curing methods. Prices range from $9 – $9.80 per 250g on Redmart, and $37 – $46 per kg at SONS (no minimum grammage).

New to the menu is the Mushroom & Truffle Bruschetta with Smoked Scamorza ($15). Aromatic truffle paste and melted smoked cheese come together with sautéed shimeji mushrooms to yield earthy flavours with a melt-in-your-mouth texture, with a luxurious shaving of fresh truffles adding a finishing touch.

Another new arrival to SONS offerings, is the Cured Salmon Tartare, Avocado & Wholewheat Crostini ($15). Simple yet refreshing, the lightly salted fresh salmon tartare is well complimented by the creamy avocado that sits beneath it.

While the Duck Leg Confit with Cannellini & Cherry Tomatoes ($26) looked ever so enticing with its vibrant array of colours, I did wish for the meat to be a touch less dry. The golden, crispy skin, however, is delightful to crunch into.

For a heartier main, look to the 3-Meat Sausage, Brocoletti & Mustard Sauce ($29), a dish saturated with savouriness, thanks to the combination of pork, beef, and lamb seasoned with herbs and pepper.

If there’s one thing that &SONS absolutely nails, it’s the pasta – homemade, artisanal, and perfectly cooked. The Squid-Ink Taglioni, Wild Cuttlefish & Orange Salmoriglio ($24) features homemade al dente squid ink pasta that is artfully twisted and presented with bites of wild cuttlefish and micro herbs. The briny seafood sauce lends notes of subtlety to the dish.

Vegetarians can indulge in the Kale & Nduja with Capers & Garlic Butter ($22), a wholesome and comforting dish encased in housemade beetroot and egg ravioli.

End your meal on a sweet note with SONS’ desserts, which are decadent and mouth-watering. From Dolce Tiramisu with Chocolate Chips ($12) and Hot Chocolate Cake with Vanilla Gelato ($13) to Mango & Calamansi with Cheesecake ($12), every dessert is made with care and attention to detail.
