Alley Malatang – Dry Sichuan Malatang served on large enamel plate in Bugis, Liang Seah Street

Alley Malatang, also known as Weighing Pan Malatang, originates from China where Sichuan malatang is enjoyed over a large enamel plate resembling a weighing scale. Newly opened along Liang Seah Street in Bugis, Alley Malatang is the latest addition to the food scene, offering wallet-friendly malatang and traditional Chinese dishes.

The ingredients for the malatang are individually cling wrapped and priced according to their plate colour ($1-$2.80). Choices include marinated mala meats, seafood like fish and clam, vegetables, mushrooms and instant noodles. There are also desserts in cute enamel cups and chilled bottled beverages to choose from.

The spice level for the Sichuan malatang is fixed, though it still comes with three condiments – signature dried chilli flakes, chopped garlic and sesame oil – which would further elevate the spice and flavour of the mala broth.

Other staples to complement the meal are Sichuan Suan La Fen $4.80, Red Hot Chilli Dumplings $3 and Mi Xian $4.80. Noodle portion is quite generous.
