PUTIEN boasts seven Yellow Croaker dishes & upgraded Lor Mee with rare Wuyi Red Mushrooms

Did you know that PUTIEN’s grand menu now boasts seven yellow croaker dishes? Hailed from Ningde, Fujian, the prized fish is fast becoming a hot favourite among customers at PUTIEN for its succulent texture. Look forward to seven types of flavours that could be enjoyed from the various cooking methods.

Begin with the ‘original Fujian taste’. Tuck into the 100-Second Stewed Yellow Croaker 百秒黄花鱼 (from $13.90/ 200g), which as its name suggest, is steamed for exactly 100 seconds, while lightly seasoned with onions, ginger, Fujian aged wine and Puning bean sauce.

Warm your bellies with two other comforting soup-based dishes too – the Yellow Croaker Claypot Soup 砂锅黄花鱼汤 $19.90 (filled with pan-fried fish in a luscious, milky soup) and Yellow Croaker Fillet Soup 黄花鱼溜 $19.90 (comprising of fillets coated in sweet potato powder). The latter is accompanied with lots of coriander and more flavourful soup compared to the rest.

My favourite has got to be the Yellow Croaker in Chopped Chillies 鲜辣剁椒大黄花鱼 $39.90. By the looks of it, it might seem rather spicy but fret not. The dish is well-balanced with mildly spicy homemade sauce of chopped chilli and all-natural sun-dried Fujian sea salt, without overpowering the natural taste of the meat. Also, much effort went into the preparation of the sauce which took a total of three weeks to ferment at a precise 24 degree celsius!

On the other hand, the Yellow Croaker in Sambal Sauce 叁巴酱淋黄花鱼 $39.90 is on the sweeter side where the sambal is made from a blend of over ten different spices, tomato juice, shrimp paste and soy sauce.

Last but not least, the Chinese Kale Fried With Salted Yellow Croaker 咸鱼炒芥蓝 (from $13.90) surprises with crispy cubes of salted yellow croaker, which reminds me of ikan bilis in vegetables.
