Yun Nans 云海肴 – China’s popular chain opens in Jewel Changi Airport, Singapore

Yun Nans 云海肴 has over 100 outlets in China and opening at Jewel Changi Airport in Singapore marks its first venture into the Asian market.

Specialising in highland cuisine 高原料理, Yun Nans uses ingredients from its native homeland. In a place where the natural terrains are high above sea level, ingredients such as wild porcini, wild black truffle, wheat pumpkin (green pumpkin) and edible flowers like jasmine flowers, rose and chrysanthemum.

At the Yun Nans outlet in Singapore, there will also be the exclusive Yunnan Rice Noodles in Prawn Broth with Black Truffle $13.90, a rendition from our local favourite prawn noodles.

Signatures include the Steamed Pot Chicken Soup $23.90, made from black feet chickens that are pressured-steamed. Interestingly the soup is brewed without any water but turns out to be quite flavourful and nourishing.

My favourite is the Poached Pork Collar with Pickled Chilli $16.90. The pork slices were tender without the ominous tough membranes. The killer taste comes from the broth, thick, slightly spicy and rich in flavours. I would mop up every drop of this.

Besides meats, the Grilled Seabass with Lemongrass $22.90 is a steal too. The seabass was marinated in six spices and charcoal-grilled. It’s flesh remained pillowy soft while the extra sprinkle of chilli seasoning would give a tiny kick at the back of your throat.

The Stir Fried Wild Porcini Mushroom with Dried Chillies $24.90 was super addictive. These are flash fried with dried chilli and solo garlic. They were crispy at the edges with a chewy texture in general.

Uncommonly seen in Singapore is this dish of Spicy and Sour Egg Salad $9.90. At first glance, it might be difficult to tell the ingredients apart. But this actually comprises of slices of eggs, vegetables and mangoes tossed in a tangy sauce, then sprinkled with wild coriander.

You get a mix of soft textures contrasted with mango sweetness. Eggs have never been more unique than this.

Tossed Rice Noodles with Shredded Chicken $12.90 features seven different ingredients including the deep fried collybia albuminosa mushrooms and Yunnan-imported rice noodles that are a bit like udon but thinner.

The sauce used to mix all these together was light and savoury, reminding me of soy sauce.

Another specialty befitting a meal is the Truffle Rice Noodles in Prawn Broth $13.90.

Our typical prawn noodles get an uplift with the addition of sweet Vannamei prawns and shaved black truffles. If you are hesitating to pay over ten bucks for a prawn noodle soup, think no further. The broth is what got me scooping into my bowl. It was absolutely robust and you could tell from the bright orange how rich and divine it could get.

Even the dessert – Beancurd Pudding with Brown Sugar $4.90 – is well crafted. I thoroughly enjoyed the texture which was so smooth on the tongue and without the strong taste of the soybean. Definitely, one of the better beancurds I have by far.

Overall, the food exceeds my expectation. Worth returning for.
