Koral Restaurant, The Apurva Kempinski Bali – Underwater Fine Dining with Degustation Menu

Step into Bali’s one and only underwater restaurant, Koral Restaurant, situated within the luxurious, 5-star resort, The Apurva Kempinski Bali.

It is quite a distance from the hotel entrance to the restaurant though you would get a majestic view of the lush landscape. There is also a complimentary buggy ride at the ground floor to take you further in.

Guests may choose between the regular tables and tunnel tables (for an elevated experience). Reservation is required with deposit, i.e. IDR 500K nett per person for regular tables and IDR 3630K nett per table of two for tunnel tables.

The tunnel table offers more privacy and an unparalleled view of these lovely marine creatures such as stingrays, Chocolate Chip Starfish and various fishes. There are numerous stingrays and they swim really close to the glass.

During the meal, a scuba diver will make his way to each table for a little performance and photoshoot session too.

Helmed by Michelin-starred executive Chef Jean-Baptiste Natali, the menu presents a modern European cuisine that combines influences of Indonesian flavours and locally-sourced ingredients.

There are also vegetarian and vegan set menu options.

Embark on a gastronomic experience with the signature Koral Degustation (IDR 2500K, IDR 3500K with Wine Pairing).

The visit was made in early February this year. The menu is seasonal and subjected to changes.

The craft cocktails are beautiful and theatrical.

Highlights include the chamomile-infused gin-based Spice Market IDR 200K, Sea Margarita IDR 165K and Tirta Magnolia IDR 165K.

The amuse bouche is a sight to behold, featuring several bite-sized delights. The salmon foam with caviar on cone is especially tasty.

The first course begins with the Momokomachi, where a Japanese live oyster is paired with glistening Perseus Superior Oscietra No.2 Caviar, marinated salmon and blinis.

Following which are the Homard A La Nage (succulent mutiara spiny lobster complemented with a trio of sauces) and Tartufo Nero (homemade chicken ravioli lavished with Italian black truffle shavings).

The main courses comprise of the Japanese Seabass (an artsy presentation of crispy-herbed seabass and side salad) and Veau Sous La Mere (tender grilled veal with morel mushroom and sliced truffles). Flavour-wise, both lean on the saltier side.

Meanwhile, the exquisite Carrousell (of velvety smooth yuzu jocondo and refreshing lychee sorbet) and Koral Mignardises conclude the dinner on a satisfactory note.
