PUTIEN 18-year-history Teochew Mooncakes with Yam & Purple Sweet Potato fillings in Flakey Crust

PUTIEN’s traditional Teochew mooncakes are more than just a label to its name.

For the 18th year, these prized mooncakes snugged a coveted spot in the mind of Mr. Fong Chi Chung, CEO and Founder of PUTIEN, and remained till this day the must-sell mooncakes at PUTIEN annually.

Exquisitely crafted by the hands of Madam Leng, she has been the lady founder behind the creation of these Teochew-style mooncakes. Moving away from the typical baked skin and snowskin mooncakes, Madam Leng made hers into a pastry kind with flakey crust.

The mooncakes come in two flavours – Yam and Purple Sweet Potato – and there is a choice of having it with or without a single salted egg yolk. While the Yam is made from Thailand’s Premium Taro, the purple sweet potato is no less inferior to its counterpart as it uses Japan’s First Grade Purple Sweet Potato.

Madam Leng Mooncakes are available from 15th August to 24th September 2018 at all PUTIEN’s outlets.

The process to make these mooncakes is tedious yet rewarding.

Both the yam and purple sweet potato need to be peeled, sliced, steamed and mashed, then stir-fried with oil until they attain a smooth texture. Then they are rolled into balls to be used as filling and refrigerated for a day.

As for the mooncake crust, it is made from a mixture of two dough types – one rolled with corn oil and the other with vegetable shortening. The mixed dough is then rolled flat and layered alternatively before the filling is being wrapped within. Then it is due for frying.

What you get after frying is a flakey crust that blossoms into a nice floral swirl. It can be crunchy and a little messy when you cut/bite into it. The filling is amazingly moist, soft and not dry at all.

Relatively low in sugar level, with the purple sweet potato being significantly less sweet than the yam, the mooncakes also contain no preservatives and additives. Hence they are best eaten within three days!
