Ristorante Pietrasanta (Fusionopolis) – A taste of Tuscany from authentic handmade pasta to the secret burrata

There’s nothing quite like winding down and reflecting on the year’s experiences and achievements over a couple of hearty dishes with friends as the year inches to a close. For dining establishments like Ristorante Pietrasanta, the year-end period is an opportune moment to revitalize your menu with new dishes. 

Founded by two Italian brothers with decades’ worth of experience curating and preparing Italian cuisine, Ristorante Pietrasanta prides itself on serving hearty dishes with authentic Tuscan flavours. Situated in One-North, it serves as an ideal spot for business meetings and post-work gatherings for offices in the area. 

Starting with the Burrata ($42.90), which is also Ristorante Pietrasanta’s best-kept secret: you can’t order it off the main menu. Instead, only regulars will know of this special request which can be made to the chef. 300g blocks of Burrata are flown in from Italy every three days, so you’re guaranteed the absolute freshest. 

Indulge in more simple, yet satisfying flavours with the Porchetta ($24.90). A new addition to Ristorante Pietrasanta’s menu, this starter serves sliced roasted pork belly with rocket salad, Italian tomatoes, shaved Parmigiano Reggiano and Giuseppe Giusti 15 Years Aged Balsamico. 

The true test of any Italian establishment is in its pasta. And with all their pasta made by hand daily, it would be a sin to not try at least one of them! The Fettucine Con Salsiccio Tartufo ($28.90) is a decadent dish that features melt-in-your-mouth pork sausage with a criminally generous serving of black truffle. Be prepared for your tastebuds to be blanketed by the rich flavours! 

The Fresche Bamberi E Pomodori Secchi ($28.90) is a newcomer, with fresh hand-made tagliatelle served with prawn and semi-dried tomatoes. The prawn broth elevates the dish without verging on overly briny, and the distinctly al dente pasta is a delight to bite into. 

Ravenous groups can indulge in the Bistecca Alla Fiorentina ($149.90), which serves up a 1kg grilled Angus beef t-bone steak with roasted potatoes and beans. Cooked Tuscany style medium to rare, with only salt, pepper, rosemary, and thyme, the dish is robustly-flavoured and hearty to the last bite. 

The Galleto Disossato Arrosto ($34.90) is a deceptively unassuming dish featuring deboned organic spring chicken imported from Europe. It comes flavoured with lemon, rosemary, garlic, and served with grilled vegetables. 

For dessert, you can’t go wrong with a Cheese Cake Alle 5 Medaglie ($17.90). The texture is almost tofu-like, with a delicate, sweet aftertaste that is elevated by the Guiseppe Giusti 20 Years Aged Balsamico.
