LAVO Singapore Italian-American Restaurant & Nightclub in Marina Bay Sands

LAVO Italian Restaurant & Rooftop Bar is a concept by TAO Group, a leading F&B and nightlife company in the United States.

With two LAVO outlets in New York City and Las Vegas respectively, TAO Group has recently opened a third one in Marina Bay Sands, Singapore. Perched at an altitude of level 55, LAVO overlook the beautiful skyline of Singapore, especially at night where Singapore is transformed into a light city. 

Opened for dinner from 5PM onwards, the restaurant serves a range of Italian-American fare alongside a great variety of drinks and cocktails. As night falls, the dining ambience slowly changes vibe, edging towards a nightclub while the music becomes more upbeat and dancy.


Toast the night away with LAVO’s signature cocktails $25.

We began with a refreshing Frozé, which came in a blended smoothie concocted with Ketel One Vodka, Rose Wine and Raspberry to ease up on our palate.

My favourite accompanying cocktail went to the 58th Street Negroni, a mean portion of Gordon’s Gin, Amaro Montenegro and Dolin Dry Vermouth stirred in ice for that ultimate kick.

Appetisers began with a bang.

The Charred Octopus $32 required nothing much of jaw work with its white tender flesh. Accentuate the flavour with a squeeze of the lemon across, where the tartness brought out the sweet smoky taste of the octopus. Served alongside were some Celery, Endive, Fennel and Oregano in Red Wine Vinaigrette.

“The Meatball” $38 is the pride of LAVO. Be prepared to dig into the massive portion made from 1 pound of Fresh Ground Imperial Wagyu, Veal and Italian Sausage, draped in Marinara Sauce before being topped with Fresh Whipped Ricotta. It was soft, moist and so pleasantly flavoured that it is possibly the most delicious meatball I ever had.

Salumi-Formaggi Platter $34 comprises of a smorgasbord of Cured Meats and Italian Cheeses. A very classic favourite with a good mix of meats and cheese.

For those who need your greens, the Chopped “Louie” $38 would satisfy your intake with vibrant-looking Assorted Vegetables mixed in House Vinaigrette, beneath a neatly peeled Lobster Claw. 

The Burrata $31 with Red and Yellow Cherry Tomatoes, Onion and Pesto was decent and good for sharing.

We also had two types of pizzas: the Quattro $34 (with Formaggi, Fresh Mozzarella, Gorgonzola and Scamorza) and the Spinach and Artichoke $36 (with Mozzarella, Roasted Garlic, Black Olives and Mushrooms).

The pizzas were thin crust with lovely crispy edges. While the Spinach and Artichoke was tasty, the Quattro felt more one-dimensional.

One of the highlights of the meal was the Truffle Gnocchi $46, a decadent work of art with Potato Gnocchi in Crema and Mushroom Ragu painted with a generous shaving of Truffle. It was an explosion of textures where the soft gnocchi married the thick rich sauce and nutty taste of the truffle.

The Penne Seafood Alfredo $48, on the other hand, paled in comparison, lacking in the sweetness of the seafood overpowered by the sauce.

On to LAVO’s House Speciality, the Roasted Black Cod $56 featured a beautifully cooked fish with snowy white flesh that flaked upon forked. Surrounded by Fresh Heirloom Tomato and Crispy Portabello, it might look simple but the taste was just on point.

Meat lovers would find the grills appealing. On the meat section are options such as the Filet Mignon (226grams) $80, Bone-in Rib Eye (609grams) $98 and Rack of Lamb $88.

We had the New York Strip (396grams) $95 and 45 day dry aged Australian beef, Porterhouse $185 which diners could also add on for premium delicacies like the Lobster Oscar (Lobster, Asparagus, Bérnaise Sauce) $18 and Rossini (Foie Gras, Truffle Madeira Sauce) $40.

Some additional Sides $18 include the Creamed Spinach, Jumbo Asparagus, Roasted Rosemary Potatoes, Brussels Sprouts and Truffle French Fries. 

Leave some stomach space for desserts too as they come in sharing portions.

The 20 Layer Chocolate Cake $24 was a jaw-dropping Chocolate Devil’s Food Cake layered with Peanut Butter Mascarpone. It was gloriously rich and sinful.

If cheese could be made into a sundae, this is how it would be. The NY Cheesecake Sundae $16 was presented with chocolate-dipped Cheese alongside Balsamic Macerated Strawberries and Rosemary Whipped Cream.

Or not, indulge in the Oreo Zeppole $20 where fried oreo are to be dunk in Malted Vanilla Milkshake and Nonna’s Tiramisu $16 for an alcoholic boost of Espresso Soaked Ladyfingers injected with Black and White Rum, and Mascarpone Mousse.

Even more interesting is the Olive Oil Cake $16 not commonly found in Singapore, that came with Lemon Olive Oil Gelato and Candied Fennel. The tasted reminded me of a cross between a coconut and pineapple.

The view was magnificent from the alfresco!
