Shiki Hototogisu Ramen – Exclusive Four Season Ramen at Jewel Changi Airport

Michelin-starred Konjiki Hototogisu is chef Atsushi Yamamoto’s first ramen restaurant to open in Chijmes, Singapore. Consecutively, two more outlets are launched in Great World City and Paragon, with the forth, being named as Shiki Hototogisu Ramen, in Jewel Changi Airport.

The highlight of Shiki Hototogisu Ramen is the Signature Four Seasons ramen series, exclusive to this outlet at Jewel Changi Airport. The four types of ramen are specially crafted to bring out the flavours of Spring, Summer, Autumn and Winter respectively.

Each bowl is priced at $15.90.

I tried the Autumn bowl that comprises of six different mushrooms – Porcini, Eringi, Shiitake, Enoki, Shimeji and Oyster Mushroom – all in one bowl.

The broth was light, albeit a little oily probably due to the addition of garlic butter, whereas the presence of the black truffle enhanced the earthiness in taste subtly.

As for the noodles, I believe they are the similar ones I had at Konjiki Hototogisu too; a whole-grain healthier version.

The bowl is then finished off with the Low-Temperature Char Siu and sprinkles of onions.
