Yuen Huan Pien Oyster Egg Omelette 圓環邊蚵仔煎, Taipei Michelin Guide – Taiwanese Oyster Omelette and Clam Soup

Michelin-recommended Yuen Huan Pien Oyster Egg Omelette 圓環邊蚵仔煎 is located opposite Ningxia Night Market in Taipei. Famous for the oyster omelette and clam soup, this humble eatery has been around since 1965. Just before 5PM on a weekday, there is already a short queue forming.

Orders are taken outside before entering.

The staffs are friendly and food is served fast. The turnover of tables is high.

There are only seven items on the menu, including the signature Oyster Omelette NT $85, Oyster Soup NT $85, Clam Soup NT $85 and Garlic Oyster NT $160.

The serving size of the oyster omelette is small but packed with lots of juicy oysters and cabbage. It comes with a light brown gravy, and you can add chilli to spice up the flavour. The Taiwanese oyster omelette version seems to be the wetter and gooey kind, compared to the one in Bangkok which is crispy.

The addition of vegetables is interesting. You don’t get that in Singapore and Bangkok. It lends a crunchy bite to the otherwise flat texture.

Another highlight of the meal is the Clam Soup which is exceptional. The clams are fresh, plump and juicy.
